Roasted Delicata Squash and Sausage Sheet Pan Dinner

It’s finally delicata squash season around here! This squash isn’t as widely available in northern Utah as other winter squashes. I assume it has something to do with its shorter growing season in our region. But I love making roasted delicata squash for dinner when it’s finally available in a few grocery stores.

I tried to grow my own delicata squash plant but, sadly, it didn’t make it. So I’ve been keeping an eye out for this delightful squash to pop up in the grocery store. I can reliably find it at Trader Joe’s, and our local Harmon’s grocery store usually has it for a few weeks.

I tend to get a little too excited when I see them and end up overbuying, which means I eat a lot of roasted delicata squash this time of year. But I’m not complaining because it’s such a delicious vegetable! I mostly roast it, like in this Roasted Delicata Squash and Sausage Sheet Pan Dinner.

It’s not as sweet as butternut squash and the skin is delicate enough to eat, which is nice because I love being lazy any chance I can. I tend to use it in more savory dishes but I have seen it in sweeter recipes, too.

For this roasted squash recipe, I opted for simple.

First, I tossed the sliced squash and sliced onion in avocado oil with salt, pepper, and fresh thyme. I let that roast in a 425° F oven for about 15 minutes.

Then, I flip the squash over and add the sliced chicken sausage and pine nuts to the pan. (I love this chicken sausage I found at Costco.) I make sure everything is in a single layer and let it roast for another 10 minutes.

Finally, I sprinkle the whole pan generously with parmesan cheese and let it roast for a final 5 minutes or so to let the cheese get all melty and crisped.

It’s so simple and SO good. And good, simple, seasonal food is my absolute favorite kind.

Roasted Delicata Squash And Chicken Sausage Sheet Pan Dinner

The simplest way to enjoy delicata squash is by roasting it. And by adding chicken sausage, some pine nuts, and parmesan cheese, you've got a complete meal on a single sheet pan.
Serves 2-4, depending on appetites and what it's served with.

Ingredients
  

  • 2 delicata squash
  • 1 small onion
  • 2 tablespoons fresh thyme
  • Salt and pepper, to taste
  • 1-2 tablespoons avocado oil
  • 4 pre-cooked chicken sausages
  • 2 tablespoons pine nuts
  • 1/4 cup grated parmesan cheese

Instructions
 

  • Preheat the oven to 425° F and line a sheet pan with parchment paper. Set aside.
  • Slice off the ends of the delicata squash, then slice it lengthwise down the middle. Scoop out the seeds, then cut each half into 1/2-inch slices. Place in a large bowl.
  • Peel the outer layer from the onion and cut it in half. Then cut each half into thin slices. Add to the large bowl.
  • Add the fresh thyme, salt, and pepper to the bowl. Drizzle with avocado oil and toss to coat.
  • Lay the vegetables out on the prepared baking sheet in a single layer. I like to make sure each delicata squash piece is making direct contact with the parchment paper for optimal browning.
  • Place in the oven and roast for 15 minutes.
  • Slice each chicken sausage into 1/2-inch rounds.
  • Flip the delicata squash pieces over so the other sides can brown and add the chicken sausage and pine nuts to the pan. Spread everything out to a single layer and return to the oven for 10 minutes.
  • Give the pan a little stir and sprinkle everything with the parmesan cheese. Return to the oven for 5 minutes more.
  • Serve immediately. Squash doesn't stay crispy for long, so it's best to eat this the day of. However, I've been known to reheat leftovers in a pan or in the oven/toaster oven and it's still delicious.
