Cooling Chamomile Peach Lemonade

A last-minute barbecue with some family over the holiday weekend inspired what is officially my new favorite drink of summer. I knew I wanted to make something herbal-y and use the gorgeous peaches coming in on our trees. This Chamomile Peach Lemonade is what I came up with and it will definitely be a go-to from now on.

The recipe is super straightforward. You just make some extra strong chamomile tea, dissolve some sugar in it, and then blend it up with some peaches. The chamomile and peach flavors complement each other beautifully. And both of these herbal allies are cooling and soothing, which is perfect for these final hot days of summer. I used loose dried chamomile to make the tea but you could also use tea bags in a pinch. (Check out why I recommend loose tea over tea bags.)

This summery herbal beverage is totally customizable, too. You can skip the lemonade and just enjoy the syrup with sparkling water. Or skip the sparkling water and just use lemonade. It’s also really really good with a shot of bourbon, if that’s your thing. I mixed up individual glasses so everyone could choose their own adventure but you could definitely mix up a big batch and serve it out of a pitcher or punchbowl, too.

It perfectly captures everything I love about this time of year. It urges you to slow down and savor these final days of summer before it’s time to start turning inward during autumn and fall. I have a feeling I’ll be making another batch of these this weekend, too.

Chamomile Peach Lemonade Recipe

Chamomile Peach Lemonade

The perfect herbal beverage to slow down and soak up every last minute summer has to offer.

Ingredients
  

  • 1 1/2 cups water
  • 2 tablespoons dried chamomile*
  • 3/4 cup pure cane sugar
  • 1-2 ripe peaches
  • Lemonade
  • Sparkling water
  • Peach and lemon slices, for garnish

Instructions
 

  • Make the peach chamomile syrup by bringing the water to a boil in a small saucepan with a lid. Once the water is boiling, remove from heat and stir in the chamomile. Cover and let steep for 10 minutes.
  • Strain out the chamomile by pouring the tea through a fine-mesh strainer placed over a large heat-proof bowl or measuring cup. Press out the chamomile to get every last drop out.
  • While the tea is still hot, add in the sugar and stir to dissolve. Set aside to let cool.
  • Once cooled, place the chamomile mixture and the peach(es) in a blender and blend on high until combined.
  • Fill a glass with ice. Add 1 ounce of peach chamomile syrup, 2-3 ounces lemonade, and 2-3 ounces of sparkling water. Garnish with sliced peaches and lemon and enjoy!

Notes

You can use 2-3 bags of chamomile tea instead of the dried chamomile, in a pinch. The flavor just won’t be as strong. 
Feel free to add a shot of bourbon to each drink for a more adult beverage.
