Make the peach chamomile syrup by bringing the water to a boil in a small saucepan with a lid. Once the water is boiling, remove from heat and stir in the chamomile. Cover and let steep for 10 minutes.
Strain out the chamomile by pouring the tea through a fine-mesh strainer placed over a large heat-proof bowl or measuring cup. Press out the chamomile to get every last drop out.
While the tea is still hot, add in the sugar and stir to dissolve. Set aside to let cool.
Once cooled, place the chamomile mixture and the peach(es) in a blender and blend on high until combined.
Fill a glass with ice. Add 1 ounce of peach chamomile syrup, 2-3 ounces lemonade, and 2-3 ounces of sparkling water. Garnish with sliced peaches and lemon and enjoy!
